1 1/2 cups basmati rice
2 carrots cut lengthwise- 1 inch piece
1 cup peas
2 cups cut beans – 1 inch piece
1 stick cinnamon
3 cloves
3 cardamoms
1 tsp. chopped garlic
1 tsp. chopped ginger
1/1/2 cups onions sliced
¼ cup ghee (clarified butter) or quarter stick butter
For the garnish
Fried onions
½ cup fried cashews
2 Tbs. fried raisins

Clean wash and soak the rice for approx. 15 minutes. Drain and keep aside. Heat the ghee/butter in a pan, add the cinnamon, cardamom, cloves, ginger and garlic and cook for a couple of minutes. Add the onions and cook till they turn golden brown. Add the vegetables and fry for 8 minutes. Add the rice and 3 1/2 cups of hot water and salt and cook for 15 minutes till rice is cooked. Garnish with fried onions, cashew nuts and raisins and serve hot
